With all the blackberries growing I have to come up with ideas to use them in my cooking, so today I made a baked oatmeal. This will serve a large family or leftovers for the week.
Layer bottom of dish with fruit.
Pour oat mixture over fruit and top with more fruit and sprinkle with coconut.
Bake for about 40 minutes at 375°F.
Here is the recipe:
•2 cups large flake oats
•1/4 cup shredded coconut
•1 tsp baking powder
•2 tsp cinnamon
•Pinch Himalayan pink salt or sea salt
•1/3 cup coconut palm sugar or sweetener of choice
•1-3/4 cup unsweetened almond milk
•1 whole egg
•2 egg whites or 1/4 cup
•2 tsp pure vanilla extract
•2 Tbsp coconut oil, melted
Bottom and topping:
•2 Cups blackberries
•1 ripe banana, sliced
•6 strawberries, chopped (optional – I had some really ripe ones I decided to throw in)
Preheat oven to 375ºF. Combine dry ingredients I large bowl and mix well. Whisk together wet ingredients in separate bowl and mix well. Pour wet into dry and stir until well incorporated. Line bottom of glass dish with banana slices, strawberries and blackberries saving some for the topping (I used two small ramekins and a 8×8 Pyrex dish – an 8×8 glass dish will work just fine for this). Pour oat mixture over fruit and top with more banana slices, strawberries and blackberries. Sprinkle tops with more shredded coconut. Bake for appx. 40 minutes. Let cool 5-10 minutes before serving. Serves 6.

Strawberry Coconut Squares
•½ cup coconut butter
•½ cup coconut oil
•2Tbsp raw honey (maple syrup for vegan)
•2 scoops (62g) vanilla protein powder (I used @KaizenNaturals)
•1 Cup chopped strawberries (about 6 whole)
•½ Cup unsweetened almond milk
•Dark chocolate for drizzle
➡Blend vanilla protein, chopped strawberries and almond milk until smooth, set aside. In double boiler melt coconut butter, coconut oil and honey until no clumps remain. Pour strawberry protein mixture into coconut mixture and stir until well combined. Line 8×8 dish with parchment and pour mixture in. Place in freezer to harden for at least 6 hours. Cut into 16 squares. If desired add layer of chocolate before cutting or drizzle with chocolate. Eat completely frozen 😋🍓👌

Strawberry everything! Love strawberries and now they are becoming readily available so I try and incorporate them with as many of my meals as possible. Recipe as follows↓↓
Serves 2 hungry people
•1-1/2C oat and spelt flour
•2 scoops protein powder (I used vegan vanilla bean)
•1tsp baking powder
•1Tbsp xylitol or raw sugar of choice
•1C almond milk
•6 fresh medium strawberries
•1tsp pure vanilla extract
Whisk dry ingredients until well incorporated (I used 1/2C oat flour and 1C spelt flour). In blender combine all wet ingredients and blend until smooth, whisk into dry (may need couple more splashes of almond milk until you get right batter consistency). Preheat greased pan and fry 2-4min per side.
•1/3C plain greek yogurt
•1tsp pure vanilla extract
•Splash almond milk
▶Blend all ingredients adding almond milk to get right texture. Serve on top of pancakes. ♡
Start the day off right with this refreshing smoothie!
1-1/2 cup unsweet almond milk
1 cup frozen blueberries
5 fresh strawberries
1/2 frozen banana (or fresh)
2 tbsp peanut flour aka PB2 (can sub 1/2tbsp natural peanut butter)
1/4 tsp bee pollen (can sub 1 tsp honey)
1 tsp coconut milk powder (optional)
1 scoop glutamine (optional)
Blend all ingredients together until smooth.
Top it off with:
1 tsp chia seeds
1/2 tsp coconut
Pinch bee pollen
