Berry Crumble

If you feel like dessert for breakfast without the guilt … look no further! This berry crumble taste like dessert and very well is dessert but why not have it for breakfast too!

Today’s recipe inspiration comes from ValentinaBallerina on Instagram. I added some LeanFit whey protein, almond flour, VitaFibre and cinnamon to the crumble, chia seeds to berries and adjusted measurements to my liking.

Berry Crumble

Ingredients:

Berry Filling:
•6 medium strawberries, sliced
•1 Cup frozen or fresh blueberries
•1 Tbsp Xylitol (Or any sweetener of choice or Omit)
•½ Tbsp Chia seeds
•Sprinkle of cinnamon

Crumble:
•¾ Cup large flake oats
•½ Cup oat flour
•¼ Cup LeanFit Vanilla 100% Whey Protein (Vegans use plant based)
•1 Tbsp Almond flour
•1 Tbsp Coconut flour
•1 Tbsp VitaFibre powder (Xylitol/Stevia/Coconut Sugar can be used for replacement)
•1 tsp Cinnamon
•4 Tbsp Coconut oil, melted

Method:
Preheat oven to 375ºF. In a glass baking dish (at least 1.5 litres or 8×8)
line half of sliced strawberries on bottom, top with blueberries and then
remaining sliced strawberries. Sprinkle cinnamon, Xylitol and chia seeds over berries (alternatively you can toss all in bowl with some freshly squeezed lemon). In bowl combine all dry ingredients, pouring coconut oil in once all dry incorporated then mash together with fork until you get crumbly texture. Spread crumble mixture over berries and press down slightly. Bake in preheated oven for about 20-25 minutes. Let cool for 5-10 minutes and serve with greek yogurt and extra berries if desired.

Strawberry Banana Baked Oatmeal

What to do with super ripe bananas? Make banana bread, custard, cookies or baked oatmeal! Yes oatmeal that’s it! This is super easy to make and so very delicious. Save leftovers for the next few breakfasts or if you have a large family this will feed them!

First make sure your bananas are super ripe!

Mash those bananas, 3 medium size bananas should give you about 1-1/2 cups mashed.

Mix all ingredients together.

Pour into dishes.

I used 2 ramekins and 8×8 glass baking dish. Top with extra strawberries and banana slices.

Bake in oven @ 375° for about 25mins.

Strawberry Banana Baked Oatmeal

Wet:
•1 Egg
•2 Egg Whites
•¾ Cup Almond Milk
•1 tsp pure vanilla extract
•3 Really ripe bananas, mashed (about 1½C) + 1 sliced for top
•1 Cup strawberries, chopped + extra for top

Dry:
•2 Tbsp coconut palm sugar
•2½ Cups Large flake oats
•1 tsp baking powder
•1 tsp cinnamon
•¼ tsp pink Himalayan salt

•Coconut oil for greasing dish

Method:
Whisk dry ingredients in large bowl, set aside. Whisk eggs, mash banana, slice strawberries and combine all wet ingredients in separate bowl, add wet ingredients to dry and mix well. Pour into greased baking dish (I used 2 ramekins and 8×8 glass dish, it should all fit in a 8×8 dish) and top with slices of banana and strawberries. Bake in preheated oven @ 375ºF for about 25mins.  Serves 6-8.

Strawberry Coconut Squares

Recipe:

Strawberry Coconut Squares
🍓
Ingredients:
•½ cup coconut butter
•½ cup coconut oil
•2Tbsp raw honey (maple syrup for vegan)
•2 scoops (62g) vanilla protein powder (I used @KaizenNaturals)
•1 Cup chopped strawberries (about 6 whole)
•½ Cup unsweetened almond milk
•Dark chocolate for drizzle

Method:
➡Blend vanilla protein, chopped strawberries and almond milk until smooth, set aside.  In double boiler melt coconut butter, coconut oil and honey until no clumps remain.  Pour strawberry protein mixture into coconut mixture and stir until well combined.  Line 8×8 dish with parchment and pour mixture in.  Place in freezer to harden for at least 6 hours. Cut into 16 squares. If desired add layer of chocolate before cutting or drizzle with chocolate. Eat completely frozen 😋🍓👌

☆Chocolate Strawberry Waffles☆

I love chocolate and strawberry and these turned out super yummy, infusing the strawberries into the batter is so delicious! Recipe as follows:

Yields 6 waffles

▶Ingredients:
→Dry→
•1Cup oat flour
•1/2Cup spelt flour
•1 scoop chocolate protein powder
•1tsp baking powder
•2Tbsp cacao powder
•1tsp cinnamon
•1Tbsp xylitol
•1/4Cup organic dark chocolate chips
•1Tbsp maca powder (optional)
•1Tbsp coconut water electrolytes (optional)
→Wet→
•1/2Cup unsweetened applesauce
•1-1/4Cup coconut milk (or your choice-may need more)
•6 large fresh strawberries
•1 egg
•1tsp pure vanilla extract

▶Directions:
Preheat waffle iron. Combine all dry ingredients in large bowl until well combined. In blender blend all wet ingredients until smooth.  Add wet to dry and whisk until combined,  add more milk if needed to get right consistency. Cook in greased waffle iron. Top with greek yogurt, strawberries and extra chocolate chips. Serve ♡

Strawberry Pancakes with Greek Yogurt drizzle

Strawberry everything! Love strawberries and now they are becoming readily available so I try and incorporate them with as many of my meals as possible. Recipe as follows↓↓

Serves 2 hungry people

▶Ingredients:
▪Dry
•1-1/2C oat and spelt flour
•2 scoops protein powder (I used vegan vanilla bean)
•1tsp baking powder
•1tsp cinnamon
•1Tbsp xylitol or raw sugar of choice
▪Wet
1C almond milk
•6 fresh medium strawberries
•1 egg
•1tsp pure vanilla extract
•1/4C applesauce

▶Directions:
Whisk dry ingredients until well incorporated (I used 1/2C oat flour and 1C spelt flour). In blender combine all wet ingredients and blend until smooth, whisk into dry (may need couple more splashes of almond milk until you get right batter consistency). Preheat greased pan and fry 2-4min per side.

Topping:
5 strawberries
•1/3C plain greek yogurt
•1tsp honey
•1tsp pure vanilla extract
•1/2tsp cinnamon
•Splash almond milk
▶Blend all ingredients adding almond milk to get right texture. Serve on top of pancakes. ♡

Strawberry Pancakes

Back from Mexico and back to eating normally again. I had lots of strawberries leftover from Valentine’s day so I came up with this yummy pancake meal ♡

▶Ingredients:
1-1/2C oat flour
•1/2 scoop protein powder
•1Tbsp cinnamon
•1Tbsp maca powder (optional)
•1tsp baking powder
•1Tbsp chia seeds
•2Tbsp xylitol (or raw sugar of choice)
•1 egg
•1C pureed strawberries
•1/2-3/4C coconut milk or your choice
•1tsp pure vanilla extract

▶Directions:
Combine all dry ingredients until well combined. Puree your strawberries in blender (I had to add a little water) add all wet ingredients (start with 1/2C milk, add more if needed) to dry and mix until well combined.  Fry in pre-heated greased pan 2-4 min per side.

▶Topping:
•5 Strawberries
•1/2tsp Pure vanilla extract

▶Cut strawberries into small chunks and cook over medium heat with vanilla for about 10min, stir often and mash with fork. Top pancakes and add extra fresh strawberries.

Almond Flour Pancakes with Berry Compote

I am so craving pancakes after 24 days of whole30 so I comprimised and came up with these puppies! I had this for my dinner♡ Recipe below↓

▶Pancake Ingredients:
1C Almond flour
•1Tbsp coconut flour
•1Tbsp maca powder (optional)
•1/4tsp nutmeg
•1/2tsp cinnamon
•1/2C unsweetened applesauce
•2 eggs
•1/4C almond milk
•Coconut oil for pan

Directions:
Combine all dry ingredients in bowl (use sieve for coconut flour). Mix wet ingredients in separate bowl and add to dry, mix until well incorporated. Heat pan with coconut oil over medium-low heat (if pan is too hot the cakes may stick and burn). Spoon 1/4C of batter into heated pan, flip once sides are dry and sturdy enough to flip and cook for another minute or two. Repeat with remaining batter,  add more coconut oil if needed.

Compote ingredients:
1/2C raspberries
•1/2C blueberries

Directions:
I used frozen berries, place berries in saucepan and cook over medium heat for 5-10min. That’s it. Start this before pancakes.

Serve pancakes and top with berry compote and extra fresh berries if desired ♡

Makes 8 small pancakes
