Chocolate Chip Oatmeal Protein Cookies

I’m in the process of packing/moving and getting everything ready to renovate my house whilst taking care of my 5 month old baby so I havn’t had much time to bake. I made it a priority while baby naps to make these cookies plus packing fuel!! They turned out great. Recipe as follows 👇🏽

Chocolate Chip Oatmeal Protein Cookies

Ingredients:

•1 cups oats
•¾ cup oat flour
•1 scoop LeanFit 100% Vanilla Whey
•1 tsp baking powder
•½ tsp cinnamon
•Dash salt
•½ cup coconut sugar
•½ cup coconut oil or butter, softened
•1 tsp vanilla
•1 egg
•¼ cup chocolate chips

Method:

Preheat oven to 350ºF. Combine oats, oat flour, whey, baking powder and salt in bowl. In large mixing bowl cream together the coconut oil or butter and sugar, add in egg and vanilla, mix until combined. Slowly add the dry ingredients to the wet and mix until combined, stir in chocolate chips. Scoop cookies onto parchment lined cookie sheet, press down slightly and bake for 8-10 min or until just browned at edges. Yield 20 cookies.

Vanilla Peanut Butter Protein Cookies

Vanilla Peanut Butter Protein Cookies

Yield 22 cookies

Ingredients:
•1/2 cup LeanFit Vanilla 100% whey protein blend
•1/2 cup LeanFit Vanilla bean complete green protein blend (any plant based protein will work)
•1/2 cup ground almonds
•1/2 tsp cinnamon
•1 tsp baking powder
•1/4 – 1/2 cup almond milk
•1/4 cup natural peanut butter
•1 tsp pure vanilla extract

Directions:
Preheat oven to 350°F. Combine all dry ingredients together then mash in peanut butter, almond milk (start with 1/4 cup and slowly add remaining 1/4 cup to get cookie consistency. It should be ok to add 1/2 cup but depending on your protein powders I recommend doing this) and vanilla until well incorporated. Using cookie scoop or Tbsp size portion onto parchment lined baking sheet. Press down with fork dipping fork in water so it doesn’t stick. You can use your hands but will need to dip in water in between as well. Bake for appx. 6 minutes. Let cool on wire rack. If you make bigger cookies baking time can be upwards of 10 minutes. Yield 22 tablespoon size cookies.

Chocolate Oatmeal Pumpkin Protein Cookies

Pumpkin is everywhere right now and I love eating it everyday for now. It’s also very good for you too! I used VitaFiber for extra fiber in these cookies but you can always use maple syrup or honey if you don’t have any. I made 12 big cookies. Recipe below.

Recipe:

Chocolate Oatmeal Pumpkin Protein Cookies

Dry:
•1 Cup oat flour
•1 Cup whole oats
•1/2 Cup chocolate protein powder (I use Kaizen Naturals)
•1/4 Cup Cacao powder
•1 tsp cinnamon
•Pinch nutmeg
•1 tsp baking powder
•1/4 Cup mini chocolate chips
Wet:
•1/4 Cup VitaFiber (or maple syrup/honey)
•1 tsp pure vanilla extract
•1 Egg or flax/chia egg
•1 Cup pure pumpkin puree
•1/4 Cup unsweetened applesauce

➡Preheat oven to 300ºF, line cookie sheet with parchment and set aside. Combine all dry ingredients together in large bowl. In separate bowl whisk all wet ingredients together then add to dry ingredients and mix until combined. Using ice cream scoop, scoop batter onto parchment lined sheet and press down with fork, add extra chocolate chips to top if desired. Bake for approximately 15 minutes. I made 12 cookies, if you like make them smaller.
