Blueberry Protein Pancakes

I love pancakes and am always trying to come up with different ideas, these are very simple and healthy! Hope you enjoy ♡

 ▶Pancakes:
•1C oat flour
•1/2C oats
•1tsp baking powder
•1-2 scoops protein powder (I used vanilla bean vegan powder)
•1tsp cinnamon
•2Tbsp xylitol
•1 mashed banana
•1 egg
•1tsp pure vanilla extract
•3/4 to 1-1/4C almond milk
•1C blueberries 
▶Mix dry then add wet, start with 3/4C milk then slowly add more as needed to get right consistency, stir in blueberries and fry over medium heat 2-4min per side. 

▶Topping:
•1C blueberries
•1tsp pure vanilla extract
•1tsp xylitol (optional) 
▶In saucepan cook ingredients over medium high heat for about 10-15 minutes until you get a compote. Top pancakes. 
Serves 2-3 ♡

Strawberry Pancakes

Back from Mexico and back to eating normally again. I had lots of strawberries leftover from Valentine’s day so I came up with this yummy pancake meal ♡

▶Ingredients:
1-1/2C oat flour
•1/2 scoop protein powder
•1Tbsp cinnamon
•1Tbsp maca powder (optional)
•1tsp baking powder
•1Tbsp chia seeds
•2Tbsp xylitol (or raw sugar of choice)
•1 egg
•1C pureed strawberries
•1/2-3/4C coconut milk or your choice
•1tsp pure vanilla extract

▶Directions:
Combine all dry ingredients until well combined. Puree your strawberries in blender (I had to add a little water) add all wet ingredients (start with 1/2C milk, add more if needed) to dry and mix until well combined.  Fry in pre-heated greased pan 2-4 min per side.

▶Topping:
•5 Strawberries
•1/2tsp Pure vanilla extract

▶Cut strawberries into small chunks and cook over medium heat with vanilla for about 10min, stir often and mash with fork. Top pancakes and add extra fresh strawberries.

Almond Flour Pancakes with Berry Compote

I am so craving pancakes after 24 days of whole30 so I comprimised and came up with these puppies! I had this for my dinner♡ Recipe below↓

▶Pancake Ingredients:
1C Almond flour
•1Tbsp coconut flour
•1Tbsp maca powder (optional)
•1/4tsp nutmeg
•1/2tsp cinnamon
•1/2C unsweetened applesauce
•2 eggs
•1/4C almond milk
•Coconut oil for pan

Directions:
Combine all dry ingredients in bowl (use sieve for coconut flour). Mix wet ingredients in separate bowl and add to dry, mix until well incorporated. Heat pan with coconut oil over medium-low heat (if pan is too hot the cakes may stick and burn). Spoon 1/4C of batter into heated pan, flip once sides are dry and sturdy enough to flip and cook for another minute or two. Repeat with remaining batter,  add more coconut oil if needed.

Compote ingredients:
1/2C raspberries
•1/2C blueberries

Directions:
I used frozen berries, place berries in saucepan and cook over medium heat for 5-10min. That’s it. Start this before pancakes.

Serve pancakes and top with berry compote and extra fresh berries if desired ♡

Makes 8 small pancakes
