Fruit Protein Pizza

I’ve seen a lot of these fruit “pizza’s” posted and finally got around to making one. I failed a couple times but this time it hit the spot! I use LeanFit 100% whey protein in both the crust and the greek yogurt topping, a great product that I use everyday! The raspberries, strawberries and 1 lone ripe blueberry come freshly picked from my garden this morning! My raspberry bush is a super producer this year; I got over 2 cups this morning and will get that tomorrow too! 🍇

Recipe:

Fruit Protein Pizza

Crust:
•1/2 Cup large flake oats
•2 Tbsp LeanFit Vanilla Whey
•1/2 tsp cinnamon
•1 Tbsp almond milk
•2 Tbsp unsweetened applesauce
•1/4 tsp pure vanilla extract

Method:
Preheat oven to 325ºF and line baking sheet with parchment paper. Mash all ingredients together in bowl with fork and scoop onto parchment lined baking sheet, spread out evenly into round shape approximately 1/4″ thick, bake for about 10 minutes and let cool.

Topping:

•1/4 Cup greek yogurt mixed with 2 Tbsp LeanFit vanilla whey
•Fruit as desired – I used sliced strawberries, raspberries, kiwi and banana.

➡Top cooled crust with greek yogurt and arrange berries.

I then drizzled it with melted chocolate and peanut butter mixed with hot coffee to get drizzle consistency.

Yam n’ Egg Bake

I haven’t made one of these in a while. They are so easy to throw together, the hard part is waiting for it to cook! Recipe as follows➡

➡Ingredients:
•1 large yam or sweet potato, shredded (appx. 4-6 cups)
•1/2 bell pepper, chopped
•3 green onions, chopped
•4 mushrooms, sliced
•4 pieces turkey bacon, chopped
(Feel free to add other veggies such as zucchini or broccoli, ect.)
•1/2 cup shredded mozzarella (optional / omit for paleo)
•6 large eggs
•1/2 cup egg whites
•Splash of milk (I use almond)
•Seasonings

Prepare your vegetables and Preheat oven to 375°F. Lightly grease 9×13 baking dish. Sprinkle yam evenly on bottom of dish, then sprinkle veggies over top and top with mozza. In bowl whisk eggs, whites, milk and seasonings of choice (I use S&P, oregano, garlic powder, onion powder and chili flakes). Pour eggs over yam/veggies evenly distributing. Place in preheated oven and cook for appx. 40-50 minutes until yams are soft and egg is cooked through. Let rest for about 5-10 minutes and slice. Serves 6.

Chocolate Raspberry Pancakes

I have a super abundant amount of raspberries growing on my bush so I have to eat raspberries everyday!  Nothing wrong with that cause I love them!

Today’s pancake recipes follows→
Serves 1

▶Dry:
•1/2Cup spelt flour
•1 heaping scoop protein powder
•2tsp xylitol (or raw sugar of choice)
•1/2tsp baking powder
•1/2tsp ground cinnamon
•1tsp chia seeds
•2Tbsp chocolate chunks or chips

▶Wet:
•1 egg
•1/4Cup plain greek yogurt
•1tsp pure vanilla extract
•1/2Cup almond milk

▶Method:
Mix dry then whisk in wet. Preheat pan and grease. Spoon mixture into pan and cook 1-2min per side. I topped with greek yogurt/raspberry mixture and extra chocolate chunks and fresh raspberries I picked straight from the bush! Enjoy ♡

☆Chocolate Strawberry Waffles☆

I love chocolate and strawberry and these turned out super yummy, infusing the strawberries into the batter is so delicious! Recipe as follows:

Yields 6 waffles

▶Ingredients:
→Dry→
•1Cup oat flour
•1/2Cup spelt flour
•1 scoop chocolate protein powder
•1tsp baking powder
•2Tbsp cacao powder
•1tsp cinnamon
•1Tbsp xylitol
•1/4Cup organic dark chocolate chips
•1Tbsp maca powder (optional)
•1Tbsp coconut water electrolytes (optional)
→Wet→
•1/2Cup unsweetened applesauce
•1-1/4Cup coconut milk (or your choice-may need more)
•6 large fresh strawberries
•1 egg
•1tsp pure vanilla extract

▶Directions:
Preheat waffle iron. Combine all dry ingredients in large bowl until well combined. In blender blend all wet ingredients until smooth.  Add wet to dry and whisk until combined,  add more milk if needed to get right consistency. Cook in greased waffle iron. Top with greek yogurt, strawberries and extra chocolate chips. Serve ♡

Chocolate Peanut Butter Banana Chia Pudding

I am in love with chia seeds, I try to incorporate them into my meals as much as possible. Chia seeds are packed with omega-3 fatty acids, these fats are important for brain health. They are also a great sources of dietary fibre, adding these gems to your diet is an easy way to ensure you are getting a good dose of fibre. They have many more excellent benefits that I could go on but I know you all want the recipe so here it is↓↓↓

▶Ingredients:
•1Cup almond milk
•1tsp agave syrup
•1Tbsp cocao powder
•1Tbsp peanut butter
•1/4 banana
•1/4Cup chia seeds
•Frozen Raspberries

Directions:
Blend almond milk, agave, cocao, PB and banana until well combined. Pour over chia seeds in container with lid and shake up (can also stir), place in fridge for few hours or overnight. Blend raspberries with splash of water and layer with chia pudding. Enjoy ♡

Blueberry Protein Pancakes

I love pancakes and am always trying to come up with different ideas, these are very simple and healthy! Hope you enjoy ♡

 ▶Pancakes:
•1C oat flour
•1/2C oats
•1tsp baking powder
•1-2 scoops protein powder (I used vanilla bean vegan powder)
•1tsp cinnamon
•2Tbsp xylitol
•1 mashed banana
•1 egg
•1tsp pure vanilla extract
•3/4 to 1-1/4C almond milk
•1C blueberries 
▶Mix dry then add wet, start with 3/4C milk then slowly add more as needed to get right consistency, stir in blueberries and fry over medium heat 2-4min per side. 

▶Topping:
•1C blueberries
•1tsp pure vanilla extract
•1tsp xylitol (optional) 
▶In saucepan cook ingredients over medium high heat for about 10-15 minutes until you get a compote. Top pancakes. 
Serves 2-3 ♡

♧Shamrock Waffles♣

St. Patrick’s Day is coming up so decided to make some green food! Shamrock waffles↓♧♣

Serves 3

▶Ingredients:
→Dry:
1C oat flour (spelt or whole wheat will work)
•1/2C large flake oats
•4Tbsp hemp protein powder
•1tsp baking powder
•1tsp cinnamon
•1Tbsp maca powder (optional)
•2Tbsp xylitol or raw sugar of choice
•1Tbsp chia seeds
→Wet:
1C unsweetened almond milk
•1tsp pure vanilla extract
•1egg or flax egg
•1/2C unsweetened applesauce
•2 large handfuls spinach

▶Directions:
Mix all dry ingredients in bowl until well combined. Place all wet ingredients in blender and blend. Add wet to dry and whisk until combined. Heat waffle iron and cook per your waffle iron (mine takes about 2min15sec).
Top with berries, coconut and agave if desired. Enjoy♡

Made some more of these today but made pancakes instead, only change was I added 1/4tsp of xantham gum to dry ingredients. The green fluff is greek yogurt, honey, vanilla and handful of spinach blended (little splash of almond milk). →→→↓↓↓
