Chocolate chunk Froyo

Needed something chocolatey so decided to make some chocolate froyo,  recipe as follows. This recipe has an aquired taste and can be quite tart, please make sure you like the yogurt you are using.

▶Ingredients
•2 cups 0% greek yogurt
•1-1/2 cups unsweetened almond milk
•1/4 cup plus 2 tbsp raw cocoa powder
•1/2 tsp xantham gum (optional)
•1 tbsp pure vanilla
•4-5 tbsp xylitol
•3 tbsp coconut palm sugar or raw brown sugar
•Optional items:
Dark chocolate, chocolate chips, dark chocolate kitkat, almond fudge

▶Directions:
Whisk yogurt and milk then add all other ingredients except optional items and whisk until smooth. Transfer to ice cream maker, once it starts to solidify add optional items as you like, I added 1 square of 85% dark chocolate chopped into chunks, 2 dark chocolate kitkat sticks chopped, handful of dark chocolate chips and 2 of my almond fudge squares chopped (see recipe in previous post). Store in freezer. If you don’t have an ice cream maker,  put mixture into freezer and stir every 45min for up to 4 hours, add optional items once it starts ti solidify. Enjoy!

Chocolate Protein Pancakes

Whipped these puppies up this morning, I always seem to want pancakes on Saturday morning. I just eyeball ingredients so I will try to let you in on the recipe as follows.

Pancakes:

•1-1/2 cups of oat flour
•1 scoop of chocolate protein powder
•2 tbsp cocoa powder
•1 tsp baking powder
•2 packets of stevia
•1/2 cup applesauce
•1 tsp pure vanilla
•3 egg whites
•1/2 tsp cinnamon
•unsweet almond milk (to right consistency appx. 1/2-1 cup)

Combine all dry ingredients, add wet ingredients and slowly add almond milk until you come to right consistency.  Heat pan over medium heat, grease lightly with coconut oil or grease of choice. Pour 1/2 cup batter into pan and fry.

For the topping:

•1 tbsp dark chocolate almond butter
•1 tbsp natural peanut butter
•3 tbsp 0% greek yogurt
•1-2 tbsp unsweet almond milk

Melt almond/peanut butter in microwave for 45 seconds, mix together, let cool slightly then add greek yogurt and milk. You can add more milk to get a more liquid topping as it can be thick and hard to swallow.

Stack pancakes with scoop of topping between and on top. Topped with cocoa nibs.

Serves 2 (I couldn’t finish the stack) my boyfriend was able to though

Chocolate Peanut Butter Froyo

Chocolate Peanut Butter Froyo

Chocolate Peanut Butter Froyo:

1-1/2C 0% Greek Yogurt
3 Tbsp natural peanut butter
2 Tbsp unsweet cocoa
1 Tbsp honey
1/2 cup unsweet almond milk (or milk of choice)

Blend all together with hand blender, pour into ice cream maker and use according to your maker. If you don’t have a ice cream maker than you can always put in freezer stirring every 45minutes or so (takes longer obviously). Serve soft or store in freezer.

Toppings are endless, here I have organic dark chocolate wafers chopped, 1/2 of one of my almond “fudge” bars chopped, walnuts, chopped 85% dark chocolate, natural and dark chocolate peanut butter melted and drizzled over top. Choose whatever toppings you like!
