Double Chocolate Protein Muffins

DOUBLE CHOCOLATE PROTEIN MUFFINS

Yield 12-14 muffins

INGREDIENTS

Dry
•1 cup Gluten Free Only Oats Oat Flour
•2 scoops LeanFit Chocolate whey naturals
•1/3 cup cacao powder
•¼ tsp salt
•½ tsp cinnamon
•1 tsp baking powder
Wet
•2 eggs
•½ cup VitaFiber syrup *see below for subs
•½ cup 2% Greek yogurt
•1/3 cup unsweetened applesauce
•1 tsp pure vanilla extract
•¼ cup unsweetened almond milk
•1/3 cup Lily’s Sugar Free dark chocolate chips

METHOD
1. Preheat oven to 350°F and line or grease 12 muffin tin.
2. Mix together the dry ingredients in a large bowl.
3. Beat eggs, syrup, Greek yogurt, applesauce, vanilla and almond milk in separate bowl.
4. Pour the wet ingredients into the dry ingredients, and fold everything together. Be careful not to over stir the batter (If to dry add 1-2 tablespoons of milk if needed).
5. Fold in chocolate chips.
6. Evenly divide the batter among muffin tin (I got 14 muffins). If desired, add chocolate chips on top of each muffin.
7. Bake between 15 to 20 minutes, or until you can pierce the muffin with a
toothpick and it comes out clean.
8. Let cool on wire rack.

*Can substitute maple syrup, honey or any sticky sweetener in place. A granulated sugar could be used but you may need more liquid, adjust accordingly.

Spinach Protein Muffins

Ingredients:

Dry:
•1½ cups All purpose flour, unbleached
•½ cup (45g) LeanFit CompleteGreen protein powder
•½ cup coconut sugar
•2 tsp baking powder
•Pinch salt
Wet:
•1 Cup Spinach, packed
•½ Cup mashed banana or applesauce
•¼ cup coconut oil
•2 eggs
•1 tsp pure vanilla extract
•¼ cup almond milk

Method:
Preheat oven to 325ºF and line muffin tin with 12 liners or grease, set aside. In large bowl combine all dry ingredients, set aside. In blender add all wet ingredients and blend until smooth, scraping down sides a couple times if needed. Add wet ingredients to dry ingredients and fold together until just combined. Portion into muffin liners (I use an ice cream scoop to portion). Bake for 20 minutes in preheated oven or until toothpick comes clean.

Peanut Butter Stuffed Chocolate Protein Muffins

Peanut butter stuffed muffins … that is all 👌 Peanut butter and chocolate together are my favourite!

Here is the recipe.

Ingredients:

PB protein center:

•¾ cup vanilla protein (Vega used)
•¾ cup creamy peanut butter
•2 Tbsp coco oil, at room temperature
•½ tsp vanilla extract

Muffins:

•1⅔ cups organic whole wheat flour
•¾ cup organic cocoa powder
•1 Tbsp baking powder
•1 tsp cinnamon
•Dash salt
•1 cup plain 0% greek yogurt
•½ cup + 2 Tbsp almond milk
•1 tsp vanilla extract
•½ cup scant coco oil, at room temperature
•½ cup xylitol
•½ cup coconut sugar
•2 large eggs

Frosting:

•250g cream cheese, at room temperature
•½ cup creamy peanut butter
•½ cup vanilla protein
•½ cup plain 0% greek yogurt
•1-2 Tbsp maple syrup (optional)

Method:

Preheat oven to 350°. Line 22 cupcake tins with a double layer of paper liners.

For filling:

Combine protein, peanut butter, coco oil and vanilla in bowl. Beat on medium speed until well combined and mixture holds together. Roll into 22 balls, place on parchment lined baking sheet and chill in freezer while you make batter (15-20 minutes).

For Batter:

Combine flour, cocoa powder, baking powder, cinnamon and salt in a medium bowl with whisk. In a liquid measuring cup, stir together greek yogurt, milk and vanilla. In large bowl, beat coco oil and sugar on medium-high until light and fluffy, about 2 minutes. Beat in the eggs one at a time, scraping down bowl as needed. Add greek yogurt mixture to sugar mixture and combine. Create well in dry ingredients and add wet, with mixer on low speed or by hand mix just until incorporated. Spoon a tablespoon or two of batter into liners. Place one chilled ball of peanut butter filling into each cupcake well and top with remaining batter. Bake for 12-18 minutes, or until toothpick comes out clean. Cool in pan for 5-10 minutes, then transfer to wire rack and cool completely before frosting.

For frosting:

Beat together cream cheese, peanut butter, protein powder and greek yogurt until smooth. Pipe frosting onto cooled muffins and eat! Add sprinkles If desired.

Recipe notes: If you don’t want to use protein, replace with powdered sugar. Xylitol can be replaced with any granulated sugar as well.

Carrot Cake Muffins with Cream Cheese Spicy Berry Compote Frosting

So I got this idea from Masterchef the other night. Big Wille made carrot muffins with a spicy berry compote … I knew I had to recreate it plus Chef Ramsey raved about it!! So you want the recipe, see below.  I made 12 large muffins and 9 mini muffins because I ran out of the large muffin liners.

Recipe:

▶Carrot Muffins

▪Dry:
•1-1/2Cups Whole Wheat Pastry Flour
•1tsp baking soda
•1tsp ground cinnamon
•1/4tsp ground nutmeg
•1/4tsp ground ginger
•1/2tsp salt
▪Wet:
•1/4Cup coconut oil, melted
•1/2C Natural brown sugar, lightly packed (can use honey)
•1 egg, lightly beaten
•1tsp pure vanilla extract
•1Cup unsweetened applesauce
▪Fold in:
•1C shredded carrots
•1/2C raisins
•1/2C walnut halves, once measured crush

▶Directions:

1. Preheat oven to 350ºF. Line muffin tins with liners.

2. In large bowl whisk together all the dry ingredients.

3. Make a small well in the centre of the dry ingredients and add the wet ingredients.

4. Stir ingredients together until just combined, do not overmix (some flour may still be seen).

5. Fold in the shredded carrots, raisins and walnuts just until combined.

6. Spoon batter evenly among muffin liners. Bake for 18-20min (for minis I only cooked for about 13min) or  until a inserted toothpick comes out clean.

7. Remove to a wire rack to cool completely before frosting.

▶Cream Cheese Frosting

•6oz Cream Cheese
•1/2Cup plain greek yogurt
•1tsp pure vanilla extract
•1/3C raw honey (use more if needed)
•1Tbsp fresh squeezed lemon juice

▶Directions:

1. Using hand mixer mix all ingredients until smooth.  Place in fridge.

▶Spicy Berry Compote

•2Cups Raspberries
•1Tbsp raw sugar
•1/2tsp ground cinnamon
•1/8tsp ground cloves
•1/8tsp ground nutmeg
•1/8tsp cayenne pepper

▶Directions:

1. Combine all ingredients in saucepan, bring to a boil, once boiling lower heat and simmer for about 15min until it’s thick and you get a jam like texture. Cool completely.

▶To frost the muffins:

Using a piping bag spoon some of the compote mixture down one side of piping bag, then spoon cream cheese mixture down the other side (use about 2/3rds cream cheese frosting and 1/3rd berry compote in bag). You may need to squeeze a little out first to get the swirl design.  Pipe muffins and serve.
