Healthy Homemade Peppermint Chocolate

So instead of making a ton of unhealthy baking I decided to make some healthy chocolate for my family and friends for Christmas treats.

Serves 6+ I doubled the recipe and used a large baking sheet to spread. Recipe as follows:

1C coconut oil (coconut butter will work as well)
•1C cocoa powder
•1/2C agave or maple syrup
•1tsp pure vanilla extract
Optional: chopped nuts, coconut, chopped candy canes, other extracts (I used 1/8tsp mint extract and organic candy canes).

Melt coconut oil in double boiler over medium heat. (Do not use microwave – zaps nutrients)
•When oil is melted, remove from heat and add cocoa powder, agave,  vanilla and other flavor extracts. Whisk until all ingredients well combined. Make sure no water splashes in at this point-it will get mealy.
•Pour the chocolate into parchment lined dish or molds, add optional nuts/candy canes and place in the fridge to harden. Once hardened cut into bars.
Melt in your mouth deliciousness♡

Chocolate Protein Pancakes


I look forward to Saturday’s as I always make pancakes! I came up with these last week and eyeballed everything so I didn’t have a recipe, so by request I made them again and wrote down the ingredients! Here is the recipe↓↓

Serves 2 (appx. 10 pancakes)

•1C Oat flour
•1/2C Spelt flour *(see notes below for options)
•1tsp baking powder
•1-2Tbsp xylitol or raw sugar of choice
•1Tbsp cinnamon
•1-1/2 scoops of chocolate protein powder
•2Tbsp cocao powder
•1tsp vanilla
•1 egg
•1/2C applesauce
•1-1/2C unsweetened almond milk (or milk of choice)
•1/2C cold brewed coffee (can use more a.milk instead if don’t have coffee)
•1/2Tbsp chia seeds
•2Tbsp vegan chocolate chips (optional)

*You can use all oat flour or all spelt flour if desired or switch measurements around, also whole wheat flour will work.

Mix all dry ingredients together until well combined, add all wet ingredients and mix until well combined then add chia seeds and chocolate chips.

Preheat pan and spray with cooking spray or oil of choice. Spoon appx. 1/4C of mixture into pan and cook for 2-3 minutes per side.

Now for the chocolate topping! Easy peasy.

▶Chocolate Sauce:
•1Tbsp dark chocolate peanut butter melted (or any nut butter of choice)
•1Tbsp cocao powder
•3-4Tbsp unsweetened almond milk (or milk of choice)
•1tsp raw honey

▶Melt peanut butter, add all other ingredients and whisk with fork until well combined, be patient it will mix. Depending on how thick you like your sauce you can add more or less milk, I used 4Tbsp as I like mine more liquidy. Drizzle over stacked pancakes and top with 1 square of Lindt 85% dark cocao bar chopped.

Chocolate Banana Oatmeal

I absolutely love everything chocolate and am always looking for different ways to eat my oatmeal so I came up with this quick and easy recipe that was absolutely ooie gooie delicious!



•1/2C oats
•3/4C unsweetened almond milk
•1-1/2 Tbsp raw cocoa powder
•1/2 tsp cinnamon
•1/2 tsp pure vanilla extract
•1 tsp raw honey (optional)
•1 banana sliced or mashed
•1-2 tsp vegan organic chocolate chips or what you prefer (for top)

▶Mix all ingredients together except chocolate chips in saucepan over medium heat (you can either slice or mash the banana), cooking for about 5-8 minutes until all liquid is absorbed. Pour into serving dish and top with chocolate chips, mix and eat. Yummmmm


Chocolate chunk Froyo


Needed something chocolatey so decided to make some chocolate froyo,  recipe as follows. This recipe has an aquired taste and can be quite tart, please make sure you like the yogurt you are using.

•2 cups 0% greek yogurt
•1-1/2 cups unsweetened almond milk
•1/4 cup plus 2 tbsp raw cocoa powder
•1/2 tsp xantham gum (optional)
•1 tbsp pure vanilla
•4-5 tbsp xylitol
•3 tbsp coconut palm sugar or raw brown sugar
•Optional items:
Dark chocolate, chocolate chips, dark chocolate kitkat, almond fudge

Whisk yogurt and milk then add all other ingredients except optional items and whisk until smooth. Transfer to ice cream maker, once it starts to solidify add optional items as you like, I added 1 square of 85% dark chocolate chopped into chunks, 2 dark chocolate kitkat sticks chopped, handful of dark chocolate chips and 2 of my almond fudge squares chopped (see recipe in previous post). Store in freezer. If you don’t have an ice cream maker,  put mixture into freezer and stir every 45min for up to 4 hours, add optional items once it starts ti solidify. Enjoy!
