Lemon Protein Blondies πŸ‹

Perfect snacks to go! Good protein, carbs and low in fat! Only 85 calories a serving … I have 2 for my am snack! Nomnomnom:)

Ingredients:
🍋1 Cup oat flour
🍋1/2 Cup vanilla whey protein powder
🍋1/4 tsp pink Himalayan salt
🍋1 tsp baking powder
🍋1/2 Cup freshly squeezed lemon juice
🍋6 egg whites (1/2 cup)
🍋2 tsp xylitol
🍋1 Cup unsweetened applesauce

Directions:
➑Preheat oven to 350ΒΊ. Grease 8×8 glass dish with coconut oil (or use parchment paper). In large bowl mix oat flour, whey, salt and baking powder together. In separate medium bowl mix together lemon juice, egg whites, xylitol and applesauce. Add wet ingredients to dry ingredients and mix until well combined. Pour into prepared dish and bake for approximately 25 minutes. Cool and slice into 12 squares.

Lemon Coconut Truffles πŸ‹

A yummy little lemony treat to share with you.

Ingredients:

🍋1 Cup unsweetened desiccated coconut plus 3 Tbsp for coating
🍋1/2 Cup almond meal
🍋2 Tbsp extra virgin coconut oil
🍋2 Tbsp Canadian maple syrup
🍋1/2 large lemon juiced and zested (about 1Tbsp of zest)
🍋1/2 tsp pure vanilla extract
🍋Pinch pink Himalayan salt

Method:

➑In food processor combine all ingredients until you can form dough. Using your hands form balls.  In separate bowl combine the extra coconut, toss balls until well coated. Place on parchment lined dish and set in fridge for at last 30 minutes. Makes 12 truffles. Keep stored in fridge.
