Chocolate Protein Pancakes

Whipped these puppies up this morning, I always seem to want pancakes on Saturday morning. I just eyeball ingredients so I will try to let you in on the recipe as follows.

Pancakes:

•1-1/2 cups of oat flour
•1 scoop of chocolate protein powder
•2 tbsp cocoa powder
•1 tsp baking powder
•2 packets of stevia
•1/2 cup applesauce
•1 tsp pure vanilla
•3 egg whites
•1/2 tsp cinnamon
•unsweet almond milk (to right consistency appx. 1/2-1 cup)

Combine all dry ingredients, add wet ingredients and slowly add almond milk until you come to right consistency.  Heat pan over medium heat, grease lightly with coconut oil or grease of choice. Pour 1/2 cup batter into pan and fry.

For the topping:

•1 tbsp dark chocolate almond butter
•1 tbsp natural peanut butter
•3 tbsp 0% greek yogurt
•1-2 tbsp unsweet almond milk

Melt almond/peanut butter in microwave for 45 seconds, mix together, let cool slightly then add greek yogurt and milk. You can add more milk to get a more liquid topping as it can be thick and hard to swallow.

Stack pancakes with scoop of topping between and on top. Topped with cocoa nibs.

Serves 2 (I couldn’t finish the stack) my boyfriend was able to though

  1. Oh my!! I have almost all these ingredients except for apple sauce…I’m going to have to try this, looks great!!
